As the Executive Chef at Avant Tapas & Wine, Brooke Stockwell has been moving the restaurant/winery toward a local-centric menu. She is passionate about local food and farming, and has been building relationships with local farmers through the farmers markets. Now she also goes to one farm every Thursday to pick up come of the restaurant's vegetables, because "eating local food is important for supporting the local community," as she says. Brooke uses DeyDey's ground beef for their sliders- a delicious combination between juicy grass-fed beef and Brooke's masterful pairing of toppings: Gorgonzola and caramelized onions, sharp cheddar and jalapenos, and mozzarella with a balsamic reduction, served with house-made pickles.
